Vegan Munggo (Mung Beans)

Basic info

  • Servings: 2
  • Time: 30 minutes cooking + 30 minutes boiling + overnight soaking (or 1 hour boiling + 3–4 hours soaking)
  • Equipment: regular cooking utensils


  • 1 cup munggo (mung beans)
  • 3 small slices of ginger
  • 3 cloves garlic
  • 1 medium onion
  • 2 cups malunggay (moringa)
    or dahon ng ampalaya (bitter melon leaves)
    or ampalaya (bitter melon)
    or talbos ng kamote (camote tops)
    or alugbati (vine spinach)
  • cooking oil
  • salt


Note: These directions are minimal as much of the information is provided in the video above.

  1. Pre-soak munggo (mung beans) for 3–4 hours or overnight.
  2. Boil munggo until tender (30 minutes–1 hour).
  3. Remove malunggay (moringa) leaves from stems.
  4. Sauté onion, then ginger and garlic.
  5. Add munggo, then malunggay or alternatives. Add salt to taste and water if necessary.
