Basic info

Ingredients

  • ½ kg rice noodles
  • 1 ½ kg kalabasa (squash)
  • 10 pcs papad
    substitute: veggie chicharon or fried nori
  • 1 tsp atsuete (annatto)
  • 1 tsp asafoetida
    substitute: 1 large onion and 1 garlic
  • 1 ½ block tofu
  • small bunch of kinchay (Chinese celery)
  • cooking oil
  • salt

Directions

Note: These directions are minimal as much of the information is provided in the video above.

  1. Soak rice noodles in water until tender (10 mins), then boil (15 mins).
  2. Soak atsuete in water (5 mins).
  3. Boil kalabasa until tender. Then blend or mash.
  4. Fry papad.
  5. Lightly fry tofu.
  6. Add asafoetida.
  7. Crush papad.
  8. Add atsuete.
  9. Mix with blended or mashed kalabasa.
  10. Add crushed papad.
  11. Add kinchay.
